Century Eggs

Century Eggs or Preserved Eggs is a Chinese egg-based culinary dish. It is made by preserving eggs in a mixture of clay, ash, salt, quicklime, and rice hulls. It can be consumed as is, either on their own accompanied by pickled ginger, or served as a side dish. In some Chinese households, they are diced into small pieces and incorporated into the delectable Preserved Egg Congee. They can also be cooked in piping hot steamed rice, or served in Chinese spinach soup with Century Egg.
